Best way to cook woodduck.

I do alot of wood duck hunting and want to try a new recipy, anyone know a good one? :smile:

I always cook woodies, as well as mallards on the grill with bacon. Fillet the breast off the bone and marinade it over night in Italian Dressing with a clove of crushed garlic. I put the breast, garlic and salad dressing in a zip-lock bag and squeeze all the air out of it, and then put it in the refridgerator...

Fire the grill up and when it's ready, put down a layer of bacon, the duck breast on top and then a layer of bacon on top. When the bottom layer of bacon is good and crisp, remove the top layer of bacon and finish cooking it, while serving up the breasts with the crispy bacon. You can also put this bacon in some Mac and Cheese if you want and make a really good meal out of this. Add a salad and a vegetable and you're good to go. Oh yeah, don't forget the pitcher of sweet tea....

See my recipe for Mexican Teal, don't see why it wouldn't work on Mr and Mrs Woodie
