Fried Mexican Teal

Decided to try a new recipe for teal: It came out really good.

Filet teal breast and soak in sea salt water 24 hours

place each breast in a sandwich bag and beat until thin

Marinate in any type of Mexican marinade, I used Lime and Chipotle

make a egg and milk wash

Dip each breast in the wash and then roll in Harold Ensley's Fish Fry Coating

Fry until golden brown

Serve with refried beans, Mexican rice, chips and salsa and a cold beer

Spoon your favorite salsa over the top of each breast

Cajun, I thought it was excellent, my daughter normally wont eat anything wild but she tried it and ended up liking it.

Now you know you did something right!! I took some diver ducks and sea ducks (not the best) and marinated them in McCormick's grill mates- tomato, basil, garlic over night. I then seasoned my flour with tony's, garlic powder, onion powder, salt, and pepper. My wife loved it!
