I tried my hand at goose jerky and after a lot of work and prep time, I thought I was following all the instructions that I have been told but after 10 hours in the dehydrator at its lowest setting of 160 degrees it is way to dry and to a crisp!!

Thicker pieces, less time.
Why do I shoot 3.5" for geese? Because they don't make a 4" yet!

I cut mine on a 1/4" jerky board, and it takes around 8-9 hrs. on my cheap dehydrator.
