I either have mine made into sausage or I make some of it into Jerky. Sometimes I use the same recipe that I use for my big ducks and they come out pretty good.

Hot and fast for breasts, slow and low for leg/thighs....

this may be too late, but DU had a great snow goose chili recipe in one of the '04 issues that I have been making every year and it is fantastic. It may be archived on line or drop me a pm and I'll see if I can find it in my pile.

diced and seared in some of your favorite creole/cajun spices, worked into some dirty rice/jambalaya... with a serious focus on hot sauce. so much that you can't taste the goose at all, is the goal... :wink:
