Creole Rosemary Pork and Potato Stew

Cooked this couple of nights ago, thought I'd share...

3 lbs. trimmed pork shoulder
1/4 cup bacon fat or peanut oil
2 lbs. yellow onions diced
1 cup diced celery
1/8 cup minced garlic
2 tsp chopped dried rosemary leaves
1/2 tsp dried thyme leaves
3 bay leaves
1 can original Ro-tel
1 cup sherry wine
4 cups pork stock (substitute chicken stock if you can't find pork stock...I make my own)
5~6 TBSPS Dark Brown Cajun roux
1/2 tsp. finely diced lemon zest
2~2.5 lbs. potatoes 1" dice
1/2 cup sliced green onions
1/2 tsp. cayenne pepper
salt and black pepper to taste

To Cook:
In a 2 gallon stainless steel pot, heat oil on med. high heat. Season pork liberally with cajun seasoning. fry pork until heavily browned-do not burn. Add yellow onions and celery, rosemary, bay leave,s and thyme and brown for 20~25 minutes until onions are clear and start to caramelize. Add garlic and cook 5 minutes more then add Ro-tel and stir in. Cook 5 minutes. deglaze pan with sherry wine. Add pork stock and bring to a rolling boil. Add roux and stir in good, boil for 5~10 minutes but do not allow roux to stick, stir occasionally. Reduce heat to simmer for 1 hour to tenderize pork and cook in roux, stirring occasionally. Add Lemon zest and potatoes along with1/2 tsp. cayenne pepper and 1 tsp salt. Cook potatoes for 30 minutes until tender. add green onions, stir in. check salt and pepper and adjust to taste.Serve over hot white rice with french bread. enjoy.. :thumbsup:

carrots are optional. you can add 1/2 lb or so if you like....
