First take your favorite italian dressing and marinate duck breasts for at least 24 hours. After marinated cut a pocket in each breast and insert a jalapeno.Then you wrap each breast with a slice of bacon using soaked toothpicks to hold in place.Finally cook breasts on grill on medium/low turning several times until done to your liking.
Thats one of my favorite ways to do duck or goose.
Here's one of my families fav recipies.
2-4 duck breasts cubed. mix flour and old bay seasoning. Flour duck. In a frying pan saute with butter or olice oil, minced garlic, onions, and celery, once onions start to turn clear, add duck and cook for a few min till meat is medium rare. serve over long grain wild rice! Enjoy
