I finally tweeked this recipe to my liking. and it's a good one!
1/4 cup light brown sugar
1 TBSP. softened butter or margarine
1 TBSP. all purpose flour
1 1/2 tsp. ground cinnamon
1/2 cup (2 oz.) coarsely chopped pecans (1/8" pieces) can substitute walnuts
In a small bowl, mix sugar, flour, and cinnamon. add softened butter and mix with a fork into a crumble. add choppedpecans and mix. set aside.
1 1/2 cups sifted flour
2 1/2 tsps. baking powder
1/2 tsp. salt
1/2 cup sugar
1/3 cup melted butter or margarine
finely grated orange peel from 1 orange (about 3 1/2 tsps.)
juice from 1 orange
~1/4 cup of milk
1/2 tsp. almond extract
Preheat oven to 375*
In a mixing bowl, grate the orange peel from 1 orange. You want all the oil and juice as you grate. Take care to only grate the dark orange part of the orange peel.
in a small sauce pan, juice the orange and place over medium heat. Reduce to 1/2 volume. While orange juice is simmering, make a water bath and float a small bowl on the ice. When juice is concentrated, pour into bowl on ice bath, scraping the pot clean with a rubber spatula. stir the juice in the bowl a few times to cool. when cool, place in frig, until needed.
In a separate 2qt. mixing bowl, sift flour, baking powder, and salt. mix well
In the bowl with the orange peel, crack 1 egg and beat well with whisk attachment on blender. add sugar and butter, blend until frothy-about 2 minutes, scraping the sides down to absorb all the orange oil. Pour conc. orange juice into a 1/2 cup measure, then top off with milk. Pour into egg mixture along with 1/2 tsp. almond extract. Blend well.
Pour flour mixture into egg mixture and beat with rubber spatula until smooth. pour into 12 cavity muffin pan lined with paper cups, about 2 TBSPS per cup. Top with 1 TBSP. of streusel topping dividing the topping evenly among the 12 cups, then lightly press topping into cake batter to set it in place. Bake 20 minutes.
