Try this with ducks- spicy pepper duck

This is sort of a blackened duck strip recipe. I came up with the recipe by accident this past weekend when I spilled (poured) black pepper on the duck strips instead of sprinkled. Then said what the heck since I had a little picante sauce left over, I added that also.

you will need:
2 med sized duck breasts (I used the breasts from a widgeon and a gad)
black pepper
Salt
picante or salsa sauce

Take the duck breasts and slice into strips
put the strips in a small bowl
sprinkle liberally with salt
add 3/4-1 teaspoon of black pepper. *More if you really liek it peppery
mix well and let sit for about 10 min.

Heat a cast iron or simmilar type pan to high
add a little oil
when oil is hot add the seasoned duck strips
sear well on both sides (About 2-3min or so per side)
turn down the heat to MED High
add 1/4 cup of the picante sauce on top of the strips and allow to cook for about 3-4 mins.
All the liquid should be gone and the strips should be very dark. Check the strips to see if they are done. They are done at Med.

get a jar of Walkers wood Jamaican jerk seasoning...1 teaspoon for 2 breasts...increase slightly with more..marinate over night. pan fry in olive oil for about 4 minutes a side..to taste of course...my goodness was that the best tasting thing in my kitchen..enjoy... :yes:
