How to cook geese

I have a couple geese to cook. Last year i smoked 2 geese. NASTY. Does anybody know any recipes that are good? I dont like the fishy flavor.

the bbq goose from an earlier post was awsome.
where do you get geese that taste fishy?

:huh: I was wondering the same thing. The pulled goose recipe is excellent for the old tough ones. Young tender geese are good fried with onions and peppers. Just slice them against the grain of the meat and pan fry with your favorite seasoning.

I shoot them in eastern wa. They have been feeding in fields. I just see what tastes best.

I like to slice up the breasts and season them up. Then wrap them up in bacon and cook them on the grill. I think the grilling helps get some of the fat and grease out of the meat.

Never had a goose that tasted like fish... I have smoked a couple whole, could be the recipe you are using. I don't have the recipe I used with me but I will try and get it next week.

Here in RI they can get a little fishy too. I just soak the meat the night before in a lemon brine. Helps.
Not hard to hit, just easy to miss.

they probably tasted fishy because you smoked them in a fish smoker! :rofl:

Easiest recipe there is and it works great!!

Put 2 breasts in a crock pot and dump in 2 cans of fruit cocktail and cook on high 6 to 7 hours then an hour before you are ready to eat put in a whole bottle of Kraft Honey Barbecue Sauce ( Or any other brand will work) and cook for 1 additional hour. It will taste just like pot roast, even my wife devours it this way, it is simple and you will not believe how it tastes, best served with Garlic Mashed Potatoes and Corn. Try it, and let me know how it is.
(Do Not Drain Anything Leave it all in the Crock Pot)

If you are worried about a fishy taste (?! Never heard of this with geese other than Brants) brine it for two days in 1/4 cup salt to 4 cups water, plus a 1/4 cup brown sugar, plus all kinds of aromatic spices (bay leaf, thyme, onion, crushed garlic, etc)
