If you are worried about a fishy taste (?! Never heard of this with geese other than Brants) brine it for two days in 1/4 cup salt to 4 cups water, plus a 1/4 cup brown sugar, plus all kinds of aromatic spices (bay leaf, thyme, onion, crushed garlic, etc)
