I am wondering if anyon has a recipe for making their own pepperoni or "duckaroni" - Had some with a guid while fishing this summer, and I'd rather make it myself than give it to some butcher and pay through the nose.

all of the recipes i have found for pepperoni calls for several pounds of meat, well my thinking was try to find a small batch recipe but that proved impossible. So i was thinking just get a large batch and try to reduce it and replace maybe the beef or pork side of the pepperoni, or even just add the same amount of duck to the mix. The recipes call for long cure times however which is something that turned me off to it. I will try to post a few recipes today
