What is your favorite way to prepare ducks and geese for the table?

i put roasting for mallards and geese. i make jerky out of the divers.

i voted gumbo. course a big 'ol pot roasted speck is hard to beat also

Other - i usually make chili out of mine. i just recently started making jerkey and i think alot more of my ducks are going to find their way into the drier.

occasionally i will pan fry breast fillets with some sauteed onions and other vegatables.
