Questions.

Do you hang your turkeys? If so, how long do you typically hang them for? Is there a benefit to hanging a turkey?

Thanks guys! I appreciate any info flung my way!

Would you say the longer they lay, the worse they taste?

IMO...the quicker it's out of it's skin, the better. Just seems to be that way for me. Other than the one I deep fried, they all get skinned out nowadays.

I normally skin mine out shortly after I get it but have waited up to an hour on a cold day. Regardless I have never noticed a taste difference.

Either grind them up after boiling 'em and make a dressing ... or course chop 'em after boiling w/ seasoning and make pot pies ... Delicious!

OR you could heavy smoke them and cook a gumbo!

Can't go wrong if you do them like this.

*Gotta watch out for the legs though. Lots of little bones. Take your time picking them out before you grind/chop them up.*
The Cajun 7 Course Meal; 1 lb. of boudin and a six pack of Abita beer.
