Grilled Duck Bites

Postby Canned Heat » Thu Mar 06, 2008 8:31 pm

* Duck Bites *

1 cup Sweet Baby Ray's BBQ sauce (or preferred)
1 cup beer...darker the better (I like Leinie's Creamy Dark)
1 cup Yoshida's Teriyaki sauce (or any other)

Mix these in a bowl with a teaspoon of garlic powder and 1/4 to 1/2 teaspoon of red pepper flakes if you like zippy food.
Add several duck breasts to all are covered.
Marinate 8 hours or overnight. Drain marinade. Cut breasts into 1/3rds or 1/2s depending on size. Wrap bacon pieces around duck breast and secure with toothpicks. Grill until duck is done and bacon is crispy....8 to 15 minutes depending on grill and heat...or two beers' time. Eat quick or they are going to be awol soon. Remove toothpicks before serving....I had to mention that during the superbowl to some guests, believe it or not....
Reality is a great place....I just wouldn't want to live there.

I tried this recipe tonight and it was great. I used mallard breast, legs and tenderloins.

I used Arthur Bryant's Sweet with Heat BBQ sauce, Saranac Black & Tan Beer and kikoman Soy sauce.

Thanks for recipe.

Just a thought.. wouldn't it be better to cut the duck prior to sticking it in the marinade?
