Cobia is a great eating fish; very firm and meaty. I just fixed some last night on the grill. Cubed it up into kabob-sized chunks and marinated it for 30 minutes in orange juice and BBQ sauce. Then I got a good hot fire going on the grill and skewered the meat. With a hot fire, it won't take long at all. Make sure you stand by it and keep checking for done-ness. I served it on top of bitter garden greens, brown rice and avodado slices, salt and pepper, squeeze of lemon over the top.
