stew

Anyone ever do a stew with duck rather than beef? Looking for some new ideas for this season.

I think this is what you're looking for. Guaranteed winner. Everyone I have fed it to says its better than any beef stew they have had...

FULLBODY GOOSE STEW
• 4 goose breast fillets (cubed)
• 2 tsp. salt
• 1 tbsp. pepper
• 1 tbsp. oregano (dry)
• 1 tbsp. basil (dry)
• 1 cup flour
• 4 tbsp. olive oil
----------
• 1 tsp. salt
• 2 tsp. pepper
• 2 tsp. oregano (dry)
• 2 tsp. basil (dry)
• 5 sprigs rosemary (fresh)
• 2 tbsp. Worcestershire Sauce
• 1 tbsp. Balsamic Vinegar
• 1 pack "Beef Onion Soup Mix"
• 3 cups beef broth

• 2 cups carrots ("baby" preferred)
• 2 medium onions
• 3 tbsp. flour
MASHED POTATOES
• 8 medium potatoes
• 3 tbsp. milk or cream
• 2 tbsp. butter
• 1 tbsp. minced garlic
• Salt / pepper to taste

Cut goose breast fillets into 1" cubes (roughly 8 cubes per fillet). Season with salt, pepper, oregano, and basil. Toss in flour to coat well (shake off excess). Heat oil in non-stick pan over high heat. Quickly brown coated meat cubes in the hot oil. (The goal here is not to cook the meat through, but rather quickly develop a good brown crust. Divide into two or three batches to avoid overcrowding in the pan or the meat will just turn grey and tough.)

Place meat in the Crock Pot evenly. Re-season with remaining salt, pepper, oregano, and basil. Wrap rosemary sprigs in cheesecloth and place in pot (prevents leaves from falling off into sauce). Add 'beefy onion soup mix', Worcestershire sauce, and balsamic vinegar (optional if you don't have it). Gently add broth until the level is ALMOST level with the top of the meat. Cook on low for 4 hours.

Remove rosemary bundle. Add raw carrots / onions in large chunks.
Continue to cook on low for an additional 2 hours.

Whisk together remaining 4 tbsp. flour with several ounces of hot cooking liquid to temper a smooth slurry (this prevents lumps when added to the hot crock pot). Add slurry to crock pot and gently stir in (whisk out any lumps). Increase crock pot to HIGH for 30 minutes to allow the flour to 'cook' and thicken the gravy.

Serve over mashed potatoes and pair with bread for dipping.
