Duck jerky/prosciutto - interesting recipe, but safe to eat?

I've found a recipe for duck prosciutto, which is similar to duck jerky at the Jerky FAQ:

But I'm wondering, is duck jerky or duck prosciutto safe to eat? From what I understand, chicken and turkey should be fully cooked, but can duck be bad to eat raw too (even if dried and cured the way this is)? This sounds really good, and I love duck and want to try this, but I'd like a little feedback before I try to make this at home. Has anyone done this, and are there any warnings about duck that hasn't been actually cooked?

i have made duck and goose jerky since i started hunting them 5 years ago, never gotten sick. i also share jerky with my friends and anyone who wants to try a piece, no one i know has ever gotten sick from my waterfowl jerky. go for it, it is delicious.

Thanks, I'll give it a try then. Looks like I found some ideas for my venison too :)
