anyone make rabbit jerky?

i'm thinking this year i'll make some rabbit jerky, but i know rabbits often carry disease so i wondered if it's safe. anyone been doing for years without problems?

I have a teacher at school who has been doing it for awhile. it taste pretty good and he has never had any problems with disease. i think in the winter the cold kills the any disease they carry so as long as it is cold out you should be okay
