I finally found an equation that works for duck!! the process takes a day and a half but DDDAMMMMM it produces a tasty duck, My wife was even impressed and she is not a daring eater.

start by taking however many breasts your planning on preparing and soaking them at least 12 hours in brine (salt and water)

* take out of the brine and pound them out with a mallet and then soak them in buttermilk, minced garlic and some worchestershire sauce. I soaked mine for approx 6 hours.

* take out of butter milk and prepare cream cheese with some garlic salt and I used freshed diced anaheim chillis, knead it into a gooey mess.

* take your pounded soaked breast and put some cream cheese mix into the center of the breast and roll the breast around the cream cheese.

*then take bacon and wrap the stuffed breast with a few pieces of bacon (if you can seal the breast with the bacon it keeps the cream cheese from oozing out)

*secure the bacon onto the breast with tooch picks (I soaked my toothpick in a apple cider beer for 4 hours, puts a nice little taste into the breast)

*get your grill nice and hot and place the breasts on the grill, I grilled mine pretty slow I think I did 4 breasts and they cooked for approx 30-40 minutes

take off the grill and your good to go.

I read this forum and kind of took ideas from various recepies and combined them. thank you guys.

im trying this one tomorrow. except im marinating some merganser in a lemmon pepper herb thing, and my teal in bbq sauce. still going to try both cream cheese mixture (minus the anaheim chilles) and pepper jack cheese. should be good!

but i dont think mine will take 30-40 minutes :thumbsup:

ok so this recipe is great! i changed up the marinade and spices, but my girlfriend (absolutely hated duck, but she is eager to try them) just ate the last one from the first batch! i tried with some pepper jack cheese in some and your cream cheese mix. the cream cheesers are on the grill right now and man are they gooey! i got the coals about 50% gray with a nice little red glow in middle and i do 5 min per side. they turn out perfect. i pull them at about 140-145 degrees.

oh time to go pull some more!

I put a couple on the bottom of the grill for my wife to get them well done and then I cooked mine on the top shelf and they were a nice medium.

FANTASTIC!!!!

I also tried some different types of bacon also like some peppered bacon and then a hickory smoked bacon and that was nice also

Sounds good Ill deffinately give it a try. I usually just throw a jalapeno on the breast and wrap with a slice of bacon and throw on the grill for about 10 minutes.
