I finally found an equation that works for duck!! the process takes a day and a half but DDDAMMMMM it produces a tasty duck, My wife was even impressed and she is not a daring eater.
start by taking however many breasts your planning on preparing and soaking them at least 12 hours in brine (salt and water)
* take out of the brine and pound them out with a mallet and then soak them in buttermilk, minced garlic and some worchestershire sauce. I soaked mine for approx 6 hours.
* take out of butter milk and prepare cream cheese with some garlic salt and I used freshed diced anaheim chillis, knead it into a gooey mess.
* take your pounded soaked breast and put some cream cheese mix into the center of the breast and roll the breast around the cream cheese.
*then take bacon and wrap the stuffed breast with a few pieces of bacon (if you can seal the breast with the bacon it keeps the cream cheese from oozing out)
*secure the bacon onto the breast with tooch picks (I soaked my toothpick in a apple cider beer for 4 hours, puts a nice little taste into the breast)
*get your grill nice and hot and place the breasts on the grill, I grilled mine pretty slow I think I did 4 breasts and they cooked for approx 30-40 minutes
take off the grill and your good to go.
