Ok, quick question, how do you butterfly the breast? I know butterfly means to cut it in half (leaving a "hinge"), but which way do you slice the breast meat?

lengthwise, the long way, with the grain. theres a picture in the link. its easier if the meat is not completly thawed out, and use a good sharp heavy 6" chef knife.
