Simple Pan Seared Cajun Duck Breast

This is a very simple recipe that is awesome - especially if you love cajun spice.

Fillet breasts real thin.

Cover breasts w/ olive oil add Cajun spice rub, which can be found at any grocery store in the condiments section.

Allow marineted breasts to sit for a few hours (the longer, the better). Add crushed red pepper to mixture if you prefer extra spicey.

Heat up large skillet, add some olive and cook breast sections briefly, careful not to overcook. You can also cook on the grill.
