Iuse little chief smoker--1 pan of alder
cut ten mallard breasts in strips- 4 or 5 strips per half breast
soak over-night in1/2 cup salt and enough water to cover duck.next day rince strips very good. Add half cup sugar half cup brown sugar and only use the water that remains on strips after rinsing to soak them in. you want them to be very sticky, let them soak in this for at least a couple of hours. next lay strips on racks. sprinkle with onion powder garlic powder salt pepper and chilly pepper pods[available with your delivered pizza if you ask while ordering] dry for 12 to 16 hours . done
