Jerky Question

Just finished a two day ordeal of jerky making (goose and duck). My question is do you dehydrate unitl it is hard as a rock? I kept checking every hour and it seemed done outside, but felt spongy to the touch. Finally after letting it go almost 24 hours it got pretty hard, but the were still pices that were fairly flexible. Don't want it to spoil and make my family sick. Has a good flavor. Just don't know how long it ususally takes. I am using a borrowed machine. Just a cheap one with minimal directions.
