it's not for everyone, but i have used regular yellow mustard as the "sticky" part for the flour or flour/corn meal mix. use this instead of milk, egg wash, etc
marinade in whatever you like, cut in strips, rub in mustard, season how you like it, then put strips in flour mix (i recommend using gloves on this one, mustard stays on the hand for a while). pan fry and it wont take long at all, great little appetizer
i generally grill or pan sear duck, but when i fry, i go to this method

Mustard sounds pretty good. I'm gonna have to try it. I have also used ranch dressing. I used it in a recipe for chicken tenders a while back and decided to try it for ducks. Turned out real nice.

Mustard is especially good with fatty diver ducks, like scaup. It cuts the fat a bit, and also disarms any fishy flavor that might be in the meat.
