Waterfowl Summer Sausage

Has anyone ever tried any Summer Sausage made with ducks and geese? We have a good sausage company here that will do it, but I'm a little dubious. I'd mix it with Hog I think.

I tried some Venison Sausage tonight at my nephew's deer Processing place and I know when they do sausage they add some pork fat to it but to me it was still kinda dry, if you do try it tell them to double up on the fat, least I would.

OK, I will. I ate some goose jerky in the blind this morning and it was pretty good. I'm thinking if you add fat and pig it can only get better!

After hunting one day this guy gave us some duck pepperoni sticks. They were really good. He said they added about 50% beef. You can also make them yourself. Get supplies at: http://www.eldonsausage.com. I'm saving up some duck to do this at the end of the season.
