how should a cook a whole pig shoulder with the bone in??

Low and slow, best in a smoker.

If I couldn't smoke it, I'd mix up a dry rub with brown sugar, paprika, cumin, dry mustard powder, black pepper, and whatever else you felt like, rub it on heavy.

Put it in the oven at 200-225 for about 3-4 hours, then wrap it in foil, and continue for a total of about 6-8 hours (or until the meat if flaking off the bone).

Pull 'er out of the oven, let it rest (untouched) for 30 - 60 minutes then open 'er up and pull the meat off the bone and enjoy.
