FAMILY RECIPE OUT OF THE BAG

Postby dx1187 » Tue Dec 23, 2008 10:41 pm

This is all depending on how many people you are feeding but here's my normal dish. This will serve 4 people and have left overs for a couple days.

3-4 Puddlers (I smoke mine after marinading in Italian
dressing over night)
1 Large Purple Onion
1 Green Bell Pepper
2 Jalapenos (one with seeds, one without)
1 lb Jimmy Dean Sage Sausage
2 bxs Uncle Bens Wild Rice (Also very good with Zataran's
Jambalyia Mix)
1 bg Grated Mild Cheddar Cheese

I sometimes add some boudain that I smoked with the ducks...if my oldest daughter doesn't eat it before I start preparing the main dish.

Tenderize and smoke the duck cut into bite size pieces when done
Cut Vegetables and saute' the vegatables in olive oil
Brown sausage
Follow directions on rice

Mix all of the above ingrediants together in a large baking dish and bake for 15-20 minutes on 325 just to let the flavors mingle. Spread the cheese on top and allow to melt.

You are done. I like to put salsa on mine and eat it with Tostitos.

mmmmmmmmmm GOOOOOOOD!!!! Even better the next day!!
