I just thawed 3 birds to make yummy duck jerky. This is a helpful website

You basically cut out the breast meat and slice it thin, add the spices overnight, then dry it in a low heat oven or smoker.

Yep, I use Hi Mountain seasonings. Just got done with about 50 pounds. Most turned out really good. I over cooked one batch.
