Spicy Crock Pot Duck

Hey all,

I've only been waterfowling for two years, but have stumbled on to a pretty darn good way to cook them, so I thought I would share it here.

Ingredients:
3 ducks (or geese) - I use all 6 breasts and all 6 legs.
1 package of spicy smoked sausage.
2 bell peppers
1 whole onion - I prefer yellow
2-3 jalapeno peppers
1 package of frozen okra-I prefer fresh okra, but obviously, it's not always available and the frozen is pretty good.
White rice.

Marinade:
Zesty Italian Dressing
Worcestershire Sauce
-You can use any marinade you want, this one is easy and works well.

Combine the Italian Dressing and the Worcestershire sauce to make the marinade.
Cut up the breasts into a tad more than bite-sized pieces and leave the legs whole.
Marinade the duck (or goose) overnight in the refrigerator.

Chop up bell peppers, onions, sausage and jalapenos and add to the crock pot.
Add the package of okra to the crock pot.
Add all the duck meat into the crock pot and cover with your favorite BBQ sauce-I prefer Head Country Hot.
Salt and pepper to taste.

Cook on low setting for 6-8 hours or until the meat is falling off the leg bones.
Serve it over white rice.

It makes about 6 servings at my house and there are never any leftovers.
