"Here" where we get some ice, the layouts were usually painted white, and it didn't seem to matter if there was ice or not, otherwise a medium gray was used.
I often thought a gray boat with white patterns would break up the boats outline better, but frankly I doubt it matters
If you have a Navy Yard nearby, check out what color they paint their ships. I think battleship gray with a lighter shade of gray/dull white stripes is perfect.
