It depends.

Where you hunting a preserve or wild birds?

If preserve, you are going to get same beautiful colors and nice tail feathers, so it will come down to how badly was it shot. Did the dog misplace or break any tail feathers?

If a wild bird... How long are tail feathers? What are the spurs like? Similar as preserve bird, what is the overall condition of the bird, from shot and dog?

It also depends on what pose you are using too. If you are using a flying pose then spur like does not matter. You will judge more on tail feather conditions. If you are having a standing pose then spur length could be important and you can have the bird's bad side, if there is one, turned away from you.

They are beautiful birds and will make a great mount though too!
