Airbrushes, gravity vs siphon?

I am just getting into taxidermy and I have been looking at airbrushes. Not sure whether to go with a gravity brush or siphon brush. Is it just personal preference? What are the pros and cons of each one? Ive talked to a couple guys that do automotive airbrushing and they say gravity is the way to go. However, automotive is not taxidermy. I guess painting is painting though, whether its a bird beak or a bike fender its still just painting. Thoughts?
