This website does comprehensive reviews on many popular trail cameras. I have the Moultrie i40 with the IR flash and its a descent camera for the money. Its only 4 megapixel, but I think 4 is plenty for most game cameras, and 6 is a bit overkill.
There are other custom jobs that get better pic's I'm sure, but if you are just trying to keep tabs on game, most of them will work fine. I prefer the IR flash, even though a normal flash gets better pictures, b/c people are less likely to spot it going off at night from the road.
