Boning out your game without gutting

I was wondering if anyone bones out there animals without gutting them. I had to do it on a large elk I took as it wasn't rolling around to well. It made it fast and really clean to do. Boned out entire animal then made a small cut at the back of the ribs to remove the tenderloin.

I've never tried it but I've heard from other people that it's a good way to go. I usually like to save some of the long bones though to make stock and to give to my dog, but if you were by yourself a long way from your rig it will save you a ton of weight. Plus with an elk I usually like to save the neck to make enchiladas and carne asada, and there's no way to bone that thing out and it weighs a ton!
