I leave the scale on one side. Put scale side down on grill. Rubb butter over the meat, then pour lemon juice all over. Next shake over evenly (Phil Robertson's Zesty cajun style seasoning) or Tony Chachere's creole seasoning. Cut up some onion and bell pepper lay them on top of fish. Add more lemon juice at least once more befor taking off the grill. Grilling time depends size of fish.

On the half shell as you guys have suggested is great, but I also like to make a boat out of aluminum foil, place some thin slices of onion on the bottom. Put your fillets over the onions, season with your favorite spices and add a few pats of butter and some diced tomatoes. The onions keep the fish from drying out and sticking to the foil. Slide the fillet right out and serve the fish and veggie mix over rice. Great!
