In order to figure out what size, you need to figure out what the stock exhaust pipe diameter is. I'm guessing you have the 4.3. Someone else on here put a FM40 on his S10 and said it sounded good, but I think the 40 sounds ricey above 3000 RPM on that motor. I would go with either the 50 or the 70 series.

also look into the 20 series i think, on v6 motors i've heard they work well, i've got 40 series on my 98 ram and it's loud and sounds good, but don't think they'd sound good on a v6

There are a lot of videos on youtube. I would just find one you like the sound of and replicate it.

I have the 80 on my Firebird V-6 and it is, IMO, the best sounding exhaust I have ever heard

make sure that you are listening to the 40 on a v6 truck, they are loud and deep on a v8, not sure how much different they are, but they will NOT sound the same on a v6

I have a Super 40 Series on my 5.3L V8 and an AEM Brute Force intake and it is LOUD and DEEP. It is not throaty at all, anywhere through the RPM range. Even up top, it ROARS. I have heard them on a V6 and its not nearly as nice.

It's really personal preference. 2 2" pipes will perform about equal to 1 3" pipe.

what flowmaster for a Hemi Ram 1500? it would be for my dad as a father's day gift. i want it to sound like the old chargers, throaty and you can hear every cylinder firing when idling.

also, what one for a old 5.9 liter ford V8? the glasspack i have now is pretty loud but i am redoing the exhaust system this year, going with dual exhaust with headers and 3 inch pipes so i want to bump up to flowmasters. i want that cylinder firing sound in this truck too.
