A very dry sausage (40%-50% shrinkage) with a somewhat mild flavor

You must cold-smoke landjaeger, which unless you're up for (it requires a smokehouse and several days) I'd buy it instead. If you want to make it, you can look up cold-smoking set-ups on the internet. Hot-smkoing (which is what most of us do) is tasty but the meat remains perishable. Unless you are out in 35 degree weather or colder, don't pack it along...this help? I'll try to dig up a recipe (caraway and garlic are two ingredients I can remember offhand)
