Jambalaya Po-boys!!

Postby Indaswamp » Thu May 12, 2011 1:23 pm

  To die for!!

make a pork and sausage, or boneless chicken and sausage jambalaya...except add about 1/3 more ingredients than necessary for the jambalaya. when you have browned the meats and onions and have added everything back in to the pot-remove the extra 1/3 meat and caramelized onions before adding the water for the jambalaya. Make a poboy wit dat!!  simply awesome!!!!
The Cajun 7 Course Meal; 1 lb. of boudin and a six pack of Abita beer.

One of my favorite things to do with leftover jambalaya is to put it on some fresh hot buttered bread.

By the way if you or that other indafella are ever passing through New Orleans east on 90 stop at Dong Phongs and get you some pistolettes. They are like mini loaves of french bread about 7-8" long or so and they are awesome.

the Po-boy I'm referring to uses the meat, onions and seasoning before the water and rice is added. And it is outstanding!!!
