Roast Mallard

This is my mother in laws roast duck recipes. Mallards are split down the back making sure kidneys and lungs are totally removed. Soak 3 mallards over night in salt water. I use pickling salt. Wash ducks. Add about an inch of water to an electric roaster with three chopped onions and several cut up stalks of celery. Sale and pepper ducks inside and out. Place the three mallards breast up in the roaster side by side. Cook for 2 hrs. Remove ducks and make sage bread dressing in the roaster adding more water to make dressing soppy. Place ducks back in roaster breast down and cover completely with the dressing. Cook another 2 hrs. People that say they don't like wild duck go back for 3 rds and 4ths. Ned S
