I have been hunting ducks and geese for a long time and have always enjoied eating them. I can not however find a way to cook an early season goose. They seem to have been living off of pond snails and manure spreadings and are rank. I can shoot them in Jan. and they are fine, but the early season birds and terrible. I made jerky and ended up feeding it to the dog. can anyone help?

marinade them for days
or brine them
best way to get that flavor out.
and i prefer soy sauce or a strong marinade for early season birds and divers, tend to mask the flavors quite well

This brine works well for all things yucky.
For 3-4lbs of meat.
Let sit min 24hrs as much as 36hrs pungent meats and roasts 3 days or more.
1 Qt Water
4 Tbs sugar
3 Tbs kosher salt
1 Tbs blk pepper
1 tsp Thyme
2 Tbs Vinegar
4 Cloves garlic
4 Bay leaves crumbled
2 tsp Oregano
Heat the water add all ingredients, simmer 5 min. Let cool add meat.
