One of my favorite recipes for some of the "stronger" tasting species is to slice the breast meat into strips, soak overnight in milk, coat the meat with Zataran's fish fry coating, and fry in my deep fat fryer! Serve with Ranch dressing or your favorite dip! MMMM MMMM Good!

Just like coots. I tried it with coot and the fry coating was good.
