put the legs in a crock pot cook them down make gumbo

Fricasse or any braise will be good. I made mine pulled pork style by slow cooking them in a flavorful liquid til they fell off the bone and mixed them with my BBQ sauce. It took a long time, approx 6-8 hours, so get some beer and sit back. Found the braising recipe for pulled goose leg sliders on Field and Stream. You can also make sausage out of it.

fryin pan,legs,salt,pepper,a little garlic salt,cook well done,a little tuff butt fun and tastee

I debone mine, grind it and make into everything from bratwurst, jerky, various sausages, meat sticks etc. I do add some ground pork but. It works great but watch out for steel shot! Glad to see someone else deals with the legs as there is a great deal of good usable meat. I just finished grinding about 40 lbs. and made a bunch of jerky, brats and sausage.
