Snack Sticks Anyone??

I have made goose sausage many times, jerky and about everything I can think of. I want to try and do some snack sticks kinda of like slim jims. I was thinking about just buying a kit from LEM or a meat store. Before I do that does anyone have any recommendations on what to buy or how to do it? Not sure about what flavor to do yet but I leaning toward a pepperoni stick.

Anyone make any pepperoni yet? I have found a few new flavors but just wondering how they would turn out. I thinking duck will be probably better than goose for the pepperoni.

Go to www.waltonsinc.com and buy their tex mex snack stick seasoning. It's awesome for goose. I would recommend mixing 50% ground pork butt in there.

Id add a little chopped cheese and chopped jalapeno to the mix

Very good choice on the jalapeno and cheese.
