Cook duck or goose breasts in Coke

Postby walter » Wed Sep 05, 2012 8:20 am

Has anybody ever cooked duck or goose in Coke (Coca Cola)? If so how long and how much or recipes would be much appreciated.

Not really cooked in coke, however i have soaked them overnight in coke. It is an acid that will tenderize the meat. A good bbq sauce pairs well with coke-soaked birds.

I've never cooked with it but marinated the meat in spices of your choice, a a heavy splash of coke, and a few gobs of grape jelly, with soy sauce making up roughly half of the marinade and it was damn good believe it or not.

I cut breasts into small chunks, then fry with Coke and Worcheshire sauce...not bad actually.

When I was stationed in NC, they made a Coke BBQ sauce that was great, never soaked meat in it though. I stuck with OJ or pineapple juice,

cut duck or goose breast in about 3/4 inch pieces. put in a ziplock bag with salt water. change salt water a couple times a day for 2-3 days or until you get all the blood out of the meat. put meat in cola or a dark soda for a few hours. take meat out and dont rinse. cover meat in olive oil and seasoned salt and wrap in bacon. cook on grill until done. while cooking apply worschsire sauce to meat. i prefer to cook til its well done and it actually stays moist this way. this the best way ive found to cook fowl and it actually taste like steak.
