Jalapena Duck Recipe

Being from Louisiana and eating ducks I hunted most of my life, I have tried numerous ways to cook duck, some good, some not so good. A friend turned me on to this recipe for grilling doves several years back so I tried it with duck and it has evolved since then. It has become a family favorite at gatherings around my house.

Mikes Barbecued Duck Recipe

1. Marinade Duck breasts for 1 – 2 days in Milk
2. Quarter breasts into bite size pieces
3. Marinade 24 – 36 hrs in following:
2-3 limes
½ bottle of balsamic vinegar
2-3 cups red wine (any type)
Toy Chacheries seasoning (or your favorite cajun spice seasoning)
½ bottle of Allegro Original Marinade

4. Prepare Sauce
Red Plum Preserves or plum jam
2 tbsp Frozen OJ
1 – 2 tbsp honey
1 tbsp Cherry Cooking Wine

5. Wrap Ducks in thick sliced bacon cut in half as follows:
1 slice sweet onion
1 duck breast slice
1 Jalepeno pepper
1 slice "sweet" onion (Vidalia is the best)

6. Cook duck medium/rare on grill – do not overcook (Baste with sauce while cooking) maybe 5 minutes or so
7. Baste again with sauce before serving

Bet you can't eat just one:)
