One feather missing out of the bird will not matter. If you take it to a good/well known taxidermist they will make it look great. Go with the person who is the best not the cheapest. I'd go with whichever means the most.

Man I personally would mount the spoonie. Those are personally one of my favorite ducks plus they aren't exactly a common mount. I wouldn't do a mallard because they are too mainstream and everyone has them. I have a woodie on the wall and they are a great mount also. Go with whatever one is more memorable or rare for your area.

The mallard, wood duck, and shoveler in no particular order. I hope this helps!

Do woodie, greenhead, spoonie in that order. Woodie flying makes a great mount.
There are still things worth dying for and 1 of those things is freedom.

Well its more of your own opinion really. Personally I would get the Shoveler mounted because they are rare where I come from. We kill tons of woodies... and mallards. Even though woodsons are real common here I would probably still consider getting a full plummed drake mouted if I had the xtra cash because they are still very beautiful birds and make an amazing mount!! Pick whichever means most to you!!
