I'm going to make some jambalaya tomorrow and wanted to see how it does with backstrap from my deer. Anyone else tried this? Any tips or suggestions? Thanks!

It'll be fine. The true identity behind jambalaya, gumbo, and other south la food is using what you have on hand to make a good meal. Can't go wrong throwing it in. Last time a made a gumbo it was gonna be for ducks, I had a rabbit in one of my traps, through it in there. It was good.

nothing wrong with backstrap if that's what you got, but I'd use venison stew meat.
