I would have to say. . .
1. Pacific Black Brant
3. Mallards, Widgeon, Gads, Cans, etc. . . They all can be good or bad depending on what they've been eating, and what shape their in.
I dunno though, I just save all my ducks and geese from the year and make me a good bunch of Jerky (honkers), Sausage, Salami, etc. . .
I find duck is the best when processed. Too strong for me by itself. . . Usually. That is with exception of Brant, they are bar none the best waterfowl out there! Prime Rib on the Wing!
