Awesome chicken salad!

8 boiled eggs
1 lg. can chicken breast meat
3~4 TBSPS Mayo
1~2 tsps. Mustard
cajun seasoning to taste
1/2 cup finely diced celery
1 small Gala or fiji apple peeled, slice thin, 1/2" dice
1 TBSP. lemon juice

in a med. pot place eggs and cover with water. add 1 TBSP vinegar. Heat over Med. heat. When water begins to boil, add 1 TBSP salt and boil for 10 minutes. While eggs are cooking, dice celery and apple keeping separate in bowls. pour lemon juice on diced apple and stir in to keep from turning brown. When eggs are done, blanch eggs in ice water bath to cool. Peel eggs, place in a mixing bowl and mash with a fork. add mayo and mustard and stir in well. season lightly with cajun seasoning, mix. Add chicken and mash with fork, stir in well, add celery and apples, stir in. check for seasoning and moisture. if it's a little too thick add a little more mayo. serve over wheat bread with fresh tomato and Zapps creole onion chips! :thumbsup:

It's a good sandwich-That I can promise. The apple gives a compliment to it that you would not expect. I've been making this for our fishing trips, but now that I have redfish, I might make some smoked redfish salad.. :thumbsup:

Ooops. I dislike celery. Something about it just turns me off, even dipped in ranch and buffalo sauce. Ill have to give that a try though. Thats a lot of eggs for only one can of chicken.

dice the celery really fine...like 1/8" dice. with the apple, it's good, promise. :thumbsup: Or cut the celery back to 1/4 cup and add 1/4 cup green onion. :thumbsup:
