German Duck

Picked this one up from an old cook book and is one of my family's favorites. Takes a little time but worth it. Don't tell your cardiologist.

preheat oven to 400
dice up 2 breasts, shake in a bag with flour, salt, pepper
shred one small cabbage and sprinkle with red vinegar
in a covered pot (dutch oven) heat oil & butter over medium heat
LIGHTLY brown the duck pieces & set the pieces aside
cook bacon in the same pot, set bacon aside & crumble
Remove all but 2 tbsp of the drippings from the pot, and saute onions
slice up 2 kielbasas (or polish sausage), and 2 green apples
add into the pot: cabbage, sausage, apples, 1 Tbsp sugar, 1/4 tsp tarragon, 1/2 wine, bay leaf, and cook 20 minutes (until soft)
Add the duck and top with the bacon crumbles. Bake for about 25-30 minutes (don't over-cook it!)
